Pink Side of Rubin, Thracian Valley, Bulgaria, 2021, 12%

This is made from 100% Rubin, a crossing of Nebbiolo and Syrah created in Pleven, Bulgaria in 1944. The grape lends itself well to rosé, creating a light Provence-style drink, but packed with plenty of flavour. Strawberries, grapefruit, some flowers. The wine is aged for four months in French acacia barrels, which adds roundness. 

Pairing: really good with seafood, or just any summer bbq day.
